Wayfarer exclusive: in the kitchen with Chef Dean at The Ocean Club in the Bahamas

The Ocean Club, A Four Seasons Resort, made famous for many in the 007 movie Casino Royale, is well known as one of the finest resorts in the world, thanks to its location, hospitality, rooms, suites, pools, views and of course, the dining experiences. To find out more about what’s on offer, Wayfarer’s James Wilkinson spoke with The Ocean Club Executive Chef, Lester Dean.

Chef, tell us about the fantastic food and beverage offerings at the Ocean Club.

At The Ocean Club, we take tremendous pride in delivering a food and beverage experience that reflects both our luxury setting and the vibrant flavours of our destination. Our culinary team is focused on creating memorable dining experiences through fresh, high-quality ingredients, innovative techniques, and exceptional service. You can find the delectable dishes at Dune, Ocean Blu and Trattoria Versailles.

Guests can enjoy a diverse range of offerings, from elevated breakfast selections and poolside favourites to sophisticated dinner menus featuring premium seafood, expertly prepared meats, and locally inspired specialties. We emphasize seasonality and freshness, allowing the natural flavours of each ingredient to shine.

Our beverage program is equally impressive, featuring handcrafted cocktails, an extensive wine collection, premium spirits, and refreshing non-alcoholic options. There’s a big focus on local produce at the property – tell us about that.

Local produce is at the heart of our culinary philosophy at The Ocean Club. We are fortunate to be surrounded by incredible farmers, fishermen, and artisan producers who provide us with fresh, seasonal ingredients that inspire our menus every day.

By sourcing locally whenever possible, we’re able to offer our guests fruits and vegetables at their peak flavour, along with fresh seafood and regional specialties that truly reflect the character of our destination.

Not only does this elevate the quality and freshness of the dishes we serve, but it also allows us to support local communities and build meaningful relationships with our suppliers.

For me as a chef, working with local produce creates an opportunity to be creative and let the ingredients tell the story. Our menus evolve with the seasons, highlighting what’s freshest and best at any given time. Whether it’s vine-ripened tomatoes, tropical fruits, fresh herbs, or locally caught seafood, these ingredients help us deliver an authentic sense of place on every plate.

What are some of your favourite ingredients to work with at present?

Right now, some of my favourite ingredients to work with are fresh local seafood, tropical fruits, heirloom tomatoes, and vibrant fresh herbs. These ingredients are not only incredibly versatile, but they also capture the essence of our coastal location and the flavours our guests are looking for.

I’m especially passionate about working with fresh-caught fish and shellfish. When the quality of the product is exceptional, the best approach is often to keep preparations simple and let the natural flavours shine. It’s rewarding to create dishes that highlight the freshness of the seafood while incorporating subtle seasonal touches.

What are some of your favourite dishes across the property and why?

It’s always hard to pick favourites because we have so many great dishes across the property, but there are a few that I consistently come back to.

At Ocean Blu, I absolutely love the Whole Snapper and the Whole Lobster. Both dishes really showcase what we’re all about—exceptional seafood, simple preparation, and letting the quality of the ingredients speak for themselves.

The presentations are impressive, and they create a memorable dining experience while highlighting the freshness and natural flavours of the seafood.

At Trattoria, one of my favourites is the Mushroom Bolognese. It’s a dish that demonstrates how satisfying and flavourful a vegetable-forward preparation can be. The depth of flavour, richness, and comforting nature of the dish make it a standout, and it’s a great example of thoughtful Italian-inspired cooking.

Over at DUNE, I have to mention the Calamari. It’s one of those dishes that seems simple, but executing it perfectly takes real attention to detail. The texture, seasoning, and balance of flavours make it incredibly enjoyable and a dish I find myself recommending often.

What I love about these selections is that they each represent something different about our culinary program.

The Whole Snapper and Whole Lobster celebrate outstanding local seafood, the Mushroom Bolognese highlights creativity and depth of flavour, and the Calamari showcases the beauty of executing a classic dish exceptionally well. Together, they reflect the diversity and quality of the dining experiences we offer throughout the property.

Tell us about your background and your career journey so far.

My culinary journey has been driven by a genuine passion for food, hospitality, and creating memorable experiences for guests. From the beginning of my career, I was drawn to the energy of the kitchen and the opportunity to bring people together through great food.

Over 25 years, I’ve had the privilege of working in a variety of culinary environments, which allowed me to develop a strong foundation in both classic techniques and modern cooking styles. Each role helped shape my approach to leadership, creativity, and the importance of consistency in delivering exceptional dining experiences.

As I progressed in my career, I became increasingly focused on mentoring teams, developing menus, and building culinary programs that celebrate quality ingredients and thoughtful execution. I’ve always believed that great food starts with great products, which is why I’m passionate about working with local producers and incorporating fresh, seasonal ingredients into our menus whenever possible.

Today, as Executive Chef at The Ocean Club, I have the opportunity to oversee a diverse collection of dining venues, each with its own identity and culinary story. It’s incredibly rewarding to collaborate with talented teams across the property to create experiences that range from refined seafood dining at Ocean Blu to the Italian flavours of Trattoria and the iconic beachfront atmosphere at DUNE.

Looking back, my journey has been one of continuous learning and growth. Every kitchen, every mentor, and every team has contributed to who I am as a chef today. What continues to inspire me is the ability to evolve, stay creative, and most importantly, create unforgettable moments for our guests through food and hospitality.
