Open from 2pm-10pm Tuesday to Saturday, Percy offers Basque-style cuisine inspired by San Sebastián and Barcelona’s pintxos and tapas bars.
The 50-seat venue features high bar seating, communal tables and an atrium dining area with natural light peeking through, as well as a private curtained-off dining room that seats 14 guests.
In keeping with its Spanish theme, Percy features pottery influenced by Iberian Botijo and Pithos jugs, alongside Spanish tiles and marble tops.
The menu, curated in collaboration with Percy’s Executive Chef Eli Lozada, and Chef Rosy Scatigna, reflects their combined wealth of local and international experience – Lozada at Rockpool Dining Group, Epicurean and Cirq; and Scatigna at Michelin-starred kitchens across Europe including Lume, Milan and The Hand and Flowers, London, and Sydney at Hotel Morris, two-hatted Shell House and Hacienda Sydney.
“Percy’s menu is a representation of my experience from San Sebastián,” said Scatigna.
“I spent days wandering pintxos bars, tasting fresh flavours and feeling that electric buzz of people enjoying their dining experience, sharing good food and wine.
“We’re bringing that vibe here – think classic Gildas with a twist, squid bocadillos, and hearty dishes from La Cocina that stay true to what I love about Basque cooking. It’s food that’s made to be enjoyed in good company, where every bite has a story.
“Sydney’s getting a taste of San Sebastián – cool, casual, and absolutely delicious.”
Lozada emphasised the importance of delivering authentically Spanish cuisine with quality ingredients.
“Spain has some of the best produce in the world, so it was only right we sourced the best ingredients we could find for Percy’s menu,” Lozada said.
“Every dish has been designed to give that authentic Spanish flair. It’s all about fresh, traditional flavours that have been chosen to go perfectly with Percy’s list of Spanish wines.”
The beverage menu includes organic and minimal intervention wines, including native Spanish varietals from the best of independent Spanish wine producers, sourced in collaboration with Spanish wine expert, Scott Waley from The Spanish Acquisition.
A selection of cocktails beers and ciders also fit the theme, including Estrella, crafted in Barcelona.
