Grampians Olive Co. says this slow traditional method produces olives with distinct natural flavour – perfect with cheese and antipasto. Verdale is a relatively rare variety in Australia and has a unique flavour with a hint of sweet fruitiness.
They partnered with Nicholson Fine Foods to create this gold medal winning finishing vinegar (2013 Royal Hobart Fine Food Awards). Estate-bottled and specially crafted to harmonise with the flavour profile of their premium olive oils, this vinegar, according to Chef Peter Nicholson, has “deep caramel and balsamic flavours with orange citrus… the gentle acidity is balanced with fruit sugar and some spice complexity”.
