El Vista, a Latin-inspired bar and lounge headed by celebrated chef Giovanni Pilu is set to open today, marking the second collaboration between Accor’s in-house food and beverage group, Table For, and hospitality innovators The Maybe Group.

Located at the Pullman Quay Grand Sydney Harbour, El Vista takes over from the hotel’s previous bar and lounge, Hacienda.

“We’re thrilled to unveil El Vista in partnership with The Maybe Group and Giovanni Pilu. This collaboration captures exactly what Table For was created to do: unite visionary hospitality talent to create beautifully executed, culturally relevant, guest-led experiences,” Head of Table For Ben Creek said.

The opening is the second of three outlets launched – including Flaminia, a harbourside Italian restaurant from Giovanni Pilu and Marilyn Annecchini (Pilu at Freshwater) opening early December, and Bar Allora, the 1980s Italian-inspired all-day bar and restaurant now open in Sydney’s Bond Street.

In the kitchen, Chef Giovanni Pilu will serve small and large plates that nod to coastal Mexico and South America.
