Ardour sets sights on wine regions after Bowral hotel reinvention

Fresh off the multi-million dollar transformation of Milton Park, Ardour Hotels and Estates is set to add two iconic destinations in 2026.

The opening of Ardour Milton Park Bowral this week showcased the next chapter for the storied Southern Highlands estate, with its launch also marking the debut of Salter Brothers Hospitality’s Ardour Hotels & Estates brand.

The new brand is said to include a curated portfolio of immersive luxury retreats in Australia, with SBH announcing Spicers Guesthouse Hunter Valley in NSW and Kingsford The Barossa in South Australia, will both rebrand under the Ardour banner this year.

With the demand for experiential, design-led travel in regional Australia at an all-time high, Ardour’s 2026 expansion signals a new era for luxury hospitality in the country’s most sought-after wine regions,” SBH stated.

Ardour’s hand-picked collection is said to showcase elevated dining, world-class wellness and distinctive event spaces.

Originally established in 1910, the renovation of Ardour Milton Park Bowral reveals transformations across the hotel’s arrival areas, guestrooms, dining and social spaces which includes a “design narrative that adds contemporary allure while honouring the property’s historic soul.”

The hotel’s reopening introduces signature dining destinations Horderns and The Polo Bar, with The Polo Bar’s dedicated charcuterie room and spa and wellness offering, Èliva Bowral, to be launched soon.
