25hours to introduce four food and beverage venues to Sydney’s Oxford Street

Ennismore’s 25hours brand is gearing up to make its Australian debut on September 25, with the opening of 25hours Hotel The Olympia, 1-11 Oxford Street, Sydney.

The hotel, which is now taking bookings, is located on the heritage-listed site of the former West Olympia Theatre and the Grand Pacific Blue Room, which once shaped the city’s art and social scene.

The hotel design will honour the building’s cinematic past, with the lobby serving as a tribute to film culture and pieces peppered throughout the property that nod to the Theatre’s heyday.

The hotel’s 109 guest rooms will be split into two styles: ‘Dreamers’ – offering light-filled, airy spaces with soft blue tones and curated lighting to promote calm; and ‘Renegades’ – a moodier tone with darker colour palettes, bold carpets and edgy artwork.

The hotel will be home to four food and beverage venues overseen by Culinary Director Mitch Orr: The Palomar restaurant, The Mulwray wine and cocktail bar, Jacob The Angel coffee house on the ground floor, and Monica rooftop bar (Monica).

Studio Paskin’s The Palomar, a popular London venue, comes to Sydney following more than a decade of success.

The 110-seat restaurant will be centered around an open kitchen, offering a menu with influences from Southern Europe, North Africa and the Levant using the best Australian ingredients.

The Mulwray, named after Evelyn Mulwray from 1974 film Chinatown, will offer expertly crafted classic cocktails, bio-dynamic wines and varieties from lesser known growers.

Monica, created by Ennismore’s food and beverage studio Carte Blanched, promises a lush all-day rooftop oasis and lively nighttime venue with 1960s’ Hollywood nostalgia, bold patterned floors and local murals.

“More than a rooftop bar, Monica is a celebration of culture, community, and bringing back Sydney’s nightlife,” according to 25hours.
