Wayfarer TV: the secrets of inflight dining with Virgin Australia’s Luke Mangan

by James Wilkinson

Did you know we lose about 30% of our taste sensations at high altitude? That’s one of the many challenges airlines face when catering onboard, particularly when it comes to the luxury end of the aircraft.

Enter Luke Mangan, who has been one of Australia’s leading chefs and restaurateurs since 1990 and who has been the resident consulting chef for Virgin Australia since 2010, helping the airline develop one of the best Business Class menus in the sky.

Mangan’s cuisine is renowned at both his restaurants across the globe and at 38,000 feet on Virgin Australia over Australia, New Zealand, Asia and across the Pacific to the United States.

How does Mangan help make Virgin Australia’s inflight food some of the best in the sky?

WAYFARER Host and Editor-In-Chief, James Wilkinson, caught up with him after last week’s Virgin Australia launch flight from Sydney to Hong Kong to find out.
