‘Powerhouse of pastry’: Anna Polyviou takes up six-month residency at The Langham Sydney

Award-winning pastry chef and TV personality, Anna Polyviou, takes up a six-month residency as Executive Pastry Chef at The Langham Sydney, commencing January 1, 2023.

Described as the ‘powerhouse of pastry’, Polyviou’s has earned global acclaim having worked with leading chefs at London’s famous Claridge’s and top chocolatier’s Pierre Hermes in Paris.

Among her achievements, she was awarded Dessert of the Year as part of the culinary award of excellence in the UK, and has won Hotel Chef, and Chef of the Year awards at the HM Awards and TAA awards.

“I am over the moon to be joining the Langham, Sydney team, part of a globally recognized brand known for its award-winning culinary expertise and exceptional intuitive service,” she said of the appointment.

“Working within the luxury hotels environment has been dear to my heart for many years, and I’m incredibly excited to create bespoke dessert creations to continue the elegance synonymous with The Langham, Sydney and make 2023 a year to remember.”

Polyviou will design desserts for all areas of the hotel including Kitchen’s on Kent interactive dining experience, afternoon tea, in-room dining, special events and activations.

The Langham, Sydney Executive Chef, Stephen Lech, said the team is extremely excited to have her onboard.

“I’m confident that with Anna’s celebrated five-star experience along with her passion for people and her ability to bring a bold, bright and effervescent personality to the team, will bring huge benefits to The Langham, Sydney dessert offerings,” he said.

Ahead of her official start date, Polyviou is already in-house creating a new menu for The Langham’s Festive Afternoon Tea and for other festive events at the hotel.
